After buying many shrimp tacos at restaurants, we finally decided to try this recipe:

Chicken Parmesan (Easy)

“You can put as many breaded chicken breasts as you want in a baking dish and bake according to the package directions.

When there’s about 10 minutes left, take the chicken out and spoon a few Tablespoons of marinara sauce on top followed by a slice of fresh mozzarella (or shredded mozzarella) and shredded Parmesan cheese. Put back in the oven until the cheese is nice and melty.”

We are always looking for ways to save time, and the Aldis breaded chicken is one way to do so. Everyone enjoyed it with spaghetti + sauce! Will make again.

Pancake muffins

A friend sent this recipe – https://www.ahealthysliceoflife.com/recipe-pancake-muffins-for-kids/ so we decided to try it on a winter morning. I used our usual Krusteaz pancake mix (substitute milk for water and add an egg for more protein). I added blueberries to 3 of the muffins. I still prefer regular pancakes but the kids ate all of the muffins by the afternoon so they were clearly a hit!

Slow cooker french dip sandwiches

As always, I try to find a slow cooker version of recipes we enjoy.

We tried this one (https://www.chelseasmessyapron.com/french-dip-sandwich/) and seared meat ahead of time. Although sandwiches were still good, we all preferred our previous slider recipe (https://guga31bb.wordpress.com/2023/10/09/french-dip-sliders/) so we’ll stick w/that for now!

Coconut Curry Chickpeas With Pumpkin and Lime

I wanted to use up pumpkin and lime, and this recipe served its purpose (I like my curry thicker and didn’t add water). Leftovers will probably taste better. I wouldn’t make it again though.

French Dip sliders

We are always looking for more recipes that can be easily warmed up/eaten on the go as well as recipes that can be doubled or tripled.

Refried Bean and Cheese Enchiladas

We prefer only cheese in the enchiladas and making refried beans + rice as side dishes.

We also like using green enchilada sauce a little more than red enchilada sauce.
